<h2 class="wp-block-heading" id="h-9"><strong>近9成香腸屬高鈉&nbsp; 留意進食分量減高血壓風險</strong></h2>

<p>根據食安中心的資料，每100克固體食物含超過600毫克鈉，屬於「高鈉」食物。測試結果顯示，以每100克計，全部香腸樣本的平均鈉含量為780毫克，相較於本會過往測試的火腿樣本（937毫克）及火雞片樣本（888毫克）為低。測試結果顯示，約8成7（26款）樣本屬「高鈉」，沒有樣本屬「低鈉」。</p>



<p>世衞建議兒童（2至15歲）減少鈉攝入量以控制血壓。兒童的每日攝取上限應根據兒童相對於成人的能量需求向下調整。以1個每日需要1,300千卡能量的5歲女孩（19公斤體重，中度體力活動水平）為例子，進食1條34克#17便已達每日攝取上限（1,300毫克鈉）約33%（435毫克）。</p>



<p>消費者應留意不同肉類例如雞肉、豬肉和火雞肉製成的香腸的鈉含量相若，不論冷藏、冷凍或室溫儲存的香腸，大部分樣本均屬「高鈉」，除香腸外，消費者亦應減少進食火腿及火雞片等加工肉類，避免長期攝入過多鈉而增加患上高血壓的風險。</p>

<p>根據食安中心的資料，每100克食物含超過20克總脂肪，屬「高脂」食物；根據《食物及藥物（成分組合及標籤）規例》，每100克固體食物含不超過3克總脂肪，屬於「低脂」食物。測試結果中，沒有樣本屬「低脂」食物，，全部香腸樣本的平均總脂肪含量為20.0克，比過往測試的火腿樣本（4.4克）及火雞片樣本（3.2克）的平均總脂肪含量明顯較高，但跟午餐肉樣本的平均總脂肪含量（18.0克）相約。</p>

<p>硝基呋喃以往曾用於治療動物感染疾病。由於在實驗動物的可能致癌性和其他潛在健康影響，缺乏相關科學資料，聯合國糧食及農業組織／世界衞生組織聯合食品添加劑專家委員會未能為食用動物組織中殘留的呋喃唑酮、呋喃西林或其代謝物訂定一個可接受的安全水平。食品法典委員會認為監管當局應設法避免食物含有這些硝基呋喃的殘餘。硝基呋喃在內地、歐盟、美國、加拿大等地區現時未獲准用於食用動物。在本港，硝基呋喃中的呋喃唑酮及呋喃他酮為在指定食用動物的肉類和內臟中為不可驗出的獸藥。</p>

<p style="font-size:18px">不少食物經高溫煎炸後，都可能會產生基因致癌物及神經毒性物質「丙烯酰胺」。最近，消委會測試了市面77款預先和非預先包裝 薯片 、薯條、粟米脆片、蝦片、蝦條等香脆零食，發現其中70款樣本均含有可致癌物質「丙烯酰胺」，而逾3成樣本的「丙烯酰胺」含量更超出歐盟法規的基準水平，長期食用可影響神經系統或致癌。</p>





<h3 class="wp-block-heading"><strong>1款預先包裝 薯片 比基準超出2.5倍</strong></h3>

<p class="has-normal-font-size">消委會指，「丙烯酰胺」是一種有廣泛工業用途的物質，被國際癌症研究機構歸類為「可致癌」物質。消委會測試了67款常見的預先包裝香脆零食樣本，除了29款是 薯片 、薯條，其他樣本包括番薯片、蔬菜片、藜麥片、粟米脆片、蝦片、蝦條等；29款預先包裝 薯片 及薯條均被檢驗出「丙烯酰胺」，平均含量為每公斤644微克。</p>

<p class="has-normal-font-size">含量最高的1款樣本為百貨公司AEON旗下品牌「Topvalu Best Price Potato Chips Salt Flavor」，每公斤含2,614微克「丙烯酰胺」。丙烯酰胺參考基準水平為每公斤750微克，以下為其餘8款「丙烯酰胺」含量高於歐盟基準水平的預先包裝 薯片 及薯條樣本排名供參考：</p>

<p class="has-normal-font-size">消委會更在10間餐廳、快餐店及小食店購得10款非預先包裝即食薯條、薯格及薯餅樣本進行測試。其中3款樣本的「丙烯酰胺」含量超出相關歐盟法規基準水平，即食薯條制訂的基準水平每公斤500微克，包括「Five Guys」Fries、「IKEA」香脆薯格（每公斤639微克）及「意粉屋」星星薯餅（每公斤701微克），其中含量最高的「Five Guys」達每公斤964微克，比基準水平高90%。</p>





<h3 class="wp-block-heading"><strong>3款總脂肪含量最高 薯片 薯條</strong></h3>

<p class="has-normal-font-size">鈉含量方面，8款預先包裝 薯片 及薯條樣本屬於高鈉，最高的樣本是「Lorenz」的Snack World Naturals Sea Salt &amp; Pepper Potato Chips，達每100克917毫克；如果吃下一整包（100克），便等於攝取了917毫克鈉，相當於每天限量2,000毫克鈉的45.9%。</p>

<p class="has-normal-font-size">而在13款蝦片及蝦條樣本中，「佳之選」原味蝦條更是測試中鈉含量最高的樣本，；如果吃下一整包（100克），便等於攝取了1,386毫克鈉，相當於每天限量2,000毫克鈉的69.3%，建議市民小心控制食用次數和分量，與親友共享或分批食用。</p>

<h4 class="wp-block-heading"><strong>標準鈉攝取量</strong></h4>



<p>根據衛生署資料，鹽雖然可以維持人體正常運作，但過量攝取或會引致高血壓及中風等疾病。對於愛美人士，食太鹹小心腰圍增加，因為高鈉食品一般熱量都偏高，所以容易致肥。其實健康<strong>成年人每日的攝取量應維持於2000毫克內，而7-10歲兒童不應攝取多於1000毫克的鈉</strong>。</p>

<p>雖然阿拉斯加皇帝蟹並非榜首，但其實單單吃一隻蟹腳，已經高達1436.5毫克，比熟蜆的超出400毫克。</p>

<p>雖然煙熏鱈魚鈉含量偏高，但一般人的食用量為1安士，只會攝取約213.6毫克鈉，只要大家維持正常食用量，其實也不用太過擔心。</p>

<p>不論是麵包或意粉，配上煙三文魚真是十分美味。正常人大約食1安士份量，即攝取188.2毫克鈉，成份不算過高。不過，煙三魚文是加工食品，也不宜成用太多。</p>
