<p>製作方包時普遍都會加入油脂，例如植物油和牛油，令方包較為鬆軟。是次測試的樣本，檢出的總脂肪含量由每100克1.1至11.9克，相差近10倍。檢出總脂肪含量最高的樣本為「Don Don Donki」，該樣本亦為飽和脂肪酸和反式脂肪酸含量最高的樣本。檢視成分表發現，該樣本的牛油和忌廉排列於第3和第4位，估計牛油和忌廉於該樣本中所佔的百分比較高，以致各種類的脂肪含量亦較高。</p>

<p>世衞建議成人和兒童的游離糖攝取量應減至每日能量總攝取量的10％以內。以每日攝取2,000千卡能量的成年人為例，每日游離糖的攝取量應少於50克（即約10粒方糖）。1位需要攝取1,400千卡能量的5歲兒童，每日游離糖的攝取量上限則應為35克。</p>



<p>於製作麵包時，加入少量糖可加快發酵過程，以及幫助保持麵包的水分及柔軟度。測試檢出的每100克樣本的糖含量由1.2克至9.7克，全部都較食安中心為消費者提供的「高糖」食物糖分參考水平（每100克固體食物含超過15克糖）為低。《規例》訂明每100克固體食物含不超過5克糖為「低糖」食物。測試結果顯示，17款樣本屬「低糖」食物。</p>

<p>世界衞生組織（世衞）建議一般成年人每日的鈉攝取量應少於2,000毫克（約5克食鹽，略少於1平茶匙），以減低患上高血壓、心血管疾病及中風的風險。根據食物安全中心（食安中心）的食物鈉含量參考水平，每100克固體食物含超過600毫克鈉屬「高鈉」食品。是次測試的樣本所檢出的鈉含量介乎每100克208至567毫克，全部均不屬「高鈉」食品。</p>

<h2 class="wp-block-heading" id="h-"><strong>嬰幼兒的游離糖攝取建議</strong></h2>

<p>根據世界衞生組織（世衞），游離糖（free sugars）是製造商、廚師或消費者在食品中添加的所有單糖（monosaccharides）和雙糖（disaccharides），以及蜂蜜、糖漿、果汁和濃縮果汁裡的天然糖分。成分表上如有列出白砂糖、蔗糖、葡萄糖、濃縮果汁、果泥（fruit puree）等，該產品屬於含有游離糖。而水果、蔬菜、牛奶所含的天然糖分則並非游離糖。英國國民保健署、美國食品及藥物管理局皆視游離糖為添加糖（added sugars）。</p>

<p>世衞建議成人及兒童的游離糖攝取量應少於每日所需能量的10％。以1個每日需攝取800至1,250千卡（以中等活動量計算）的1至3歲幼兒為例，每日游離糖的攝取量不應多於20至31.3克。</p>



<p>香港營養師協會提醒，世衞、本港及其他地區均沒有對嬰兒（即1歲以下）訂立游離糖的建議攝取量，家長應盡量避免為嬰兒提供任何含游離糖／添加糖的食物。</p>





<h2 class="wp-block-heading" id="h--1">沒有標示糖含量的樣本或屬高糖</h2>

<p>37款樣本中，有29款的成分表標示添加糖、濃縮果汁等游離糖來源，全部樣本所標示的年齡範圍都適用於24個月以下，不符美國及英國相關機構的建議。25款樣本的糖含量絕對值（absolute numbers）於營養標籤或原包裝上標示，或由廠商提供資料，該等樣本的糖含量為每100克0至80.0克。以食用分量計算，進食1份會攝取0至8.3克糖。</p>



<p>12款樣本於成分表列出糖或濃縮果汁等游離糖來源，但卻未有標示或提供糖含量。本會未能得知該等樣本是否屬高糖食物，惟該等樣本的游離糖來源均排列於成分表頭3位，顯示游離糖的百分比有機會頗高，消費者宜多留意。</p>

<p>嬰幼兒小食的建議食用分量普遍不多，食用1份所攝入的糖未必很高，惟經常食用高糖小食，或會使嬰幼兒偏好甜食。嬰幼兒若攝取過多糖，會增加蛀牙和肥胖的風險，而肥胖則會增加日後患上慢性疾病的風險，例如心血管疾病、高血壓、糖尿病。需注意游離糖只提供能量，並無其他營養價值，因此嬰幼兒應盡量減少攝取。</p>

<p>消委會 測試採用了100款非預先包裝蛋糕（共10個蛋糕組別），並對樣本的糖及脂肪含量進行測試，包括瑞士卷、鬆餅、黑森林蛋糕、芒果慕絲蛋糕、鮮果忌廉蛋糕、千層蛋糕、雪芳蛋糕、栗子蛋糕、牛油蛋糕及拿破崙蛋糕。</p>



<p>其中，牛油蛋糕、瑞士卷、雪芳蛋糕、千層蛋糕及拿破崙蛋糕5個組別（合共41款）的平均總脂肪含量均達「高脂」食物的水平（每100克食物含超過20克總脂肪），而牛油蛋糕組別的平均總脂肪含量最高，每100克達25克。</p>



<p>總脂肪含量最高的個別樣本，是九龍新蒲崗一間店舖的「古法拿破崙蛋糕」，每100克含48克總脂肪，進食整件蛋糕（37克）便會攝入約18克總脂肪。另外，東海堂的「榛子千層酥」每100克脂肪量達38克；而Lady M一款栗子蛋糕「Gâteau aux Marrons」每100克含脂肪30克，以下為總脂肪含量較低的蛋糕組別：</p>

<p>反式脂肪除了存在於反芻動物上，有些食物經高溫烹調也會產生反式脂肪，減低人體內好膽固醇的密度，並提高壞膽固醇的密度，增加患冠心病的風險！ 消委會 指測試中總反式脂肪含量最高的一款樣本來自超群麵包西餅的「牛油切餅」，每100克已含1.1克反式脂肪，進食整件（共50克）即攝取0.55克反式脂肪，等於世衞建議的每日反式脂肪攝取限量的25%。</p>



<p>另一方面， 消委會 測試發現共96個樣本的工業生產的反式脂肪佔總脂肪的百分比都低於世界衞生組織建議的2%，全部樣本的平均值為0.36%，普遍較低。消委會指，情況反映食品業界已有能力在製作蛋糕配方中，避免使用含氫化油的食用油脂。</p>





<p class="has-medium-font-size"><strong>消委會 稱1款含糖量相當於6.6粒方糖</strong></p>

<p>含糖量方面，鬆餅、牛油蛋糕、瑞士卷和雪芳蛋糕3款組別的平均含糖量較高，每100克含量分別達19.2克、17克、13.4克及12.6克。其中Marks&amp; Spencer Food Store一款「檸檬鬆餅（Lemon Muffin）」的含糖量最高，吃完整一件114克的鬆餅即攝入33克糖，超出世衞建議每日糖攝取限量達66%。至於糖含量最低的樣本，是來自櫻桃麵包西餅的「提子切蛋糕」，每100克只含2.2克糖，相對較健康。</p>

<p>消委會 提醒，蛋糕普遍屬高脂食物，糖分較高，購買時除了可參考以上研究結果、食安中心的營養資料，以及生產品包裝上的營養標籤（如有提供），購買蛋糕前可先比較不同種類蛋糕的脂肪及糖含量，來選擇較低脂低糖的蛋糕組別，例如：</p>

<p><br>夏日炎炎，相信大家都喜歡食 雪糕 消暑，最近消費者委員會測試市面上29款預先包裝及非預先包裝的 雪糕 及冰凍甜點，竟發現有2款樣本的總含菌量和大腸菌群含量超出法例上限，而且當中6成半都屬高糖食品，食太多隨時引致肥胖及患上糖尿病、心臓病等風險。</p>

<h4 class="wp-block-heading"><br>含菌量</h4>



<p><br>阿波羅薄荷朱古力雪糕及KFC特選牛乳朱古力曲奇新地均為非預先包裝樣本，分別驗出總菌量及大腸菌群含量超出法例上限。「阿波羅」薄荷朱古力總含菌量為每克含58,000個細菌，超出法例上限50,000個細菌；「KFC」特選牛乳朱古力曲奇新地的大腸菌群含量為每克含280個大腸菌群，較100個大腸菌群標準超出一倍，反映衞生情況欠理想。</p>

<p><br>而當中有4款雪糕未有驗出細菌，包括MÖVENPICK Vanilla Dream Ice Cream、阿波羅Appolo朱古力味冰凍甜點 Monaka、XTC GELATO朱古力意式雪糕 Valrhona Chocolate Gelato、GODIVA黑巧克力軟雪糕 Dark Chocolate Soft Serve，大家可以安心食用，不過都要適可而止。</p>

<h4 class="wp-block-heading"><br>防腐劑山梨酸</h4>



<p><br>麥當勞朱古力脆皮草莓新地和Sweets House CHA CHA豪華版軟雪糕的樣本亦檢出不可添加於以乳類及脂肪為主的甜品的防腐劑山梨酸，有機會來自雪糕本身，或其他食材配料。山梨酸屬低毒性，驗出的含量亦不至於會影響人體，不過消委會已轉交食安中心跟進。</p>

<h4 class="wp-block-heading"><br>「高糖」食物</h4>



<p><br>根據食安中心的標準，每100克食物不超過5克糖，才屬於低糖食物。而在29款雪糕中，最低含糖量都達12克糖，當中6成半樣本，即19款雪糕都屬「高糖」食物。過量食用會導致體重超標，並增加患上糖尿病的風險。</p>



<h4 class="wp-block-heading"><br>「高脂」食物</h4>



<p><br>在29款雪糕中，其中1款測出屬「高脂」食物，每100克含21.4克脂肪，而當中最低脂的雪糕每100克含4.3克脂肪，仍高於3克脂肪的低脂食物標準，因此並沒有一款屬低脂食物。另外，全部樣本均含可以增加血液中「壞膽固醇」含量的飽和脂肪，影響心臟健康。</p>
