<p><br>營養學家Miss JC解釋，人一出世，如果未試過糖，正常情況下對它是沒有追求的。不過進食糖之後能夠補充能量，出於原始慾望，想食糖亦不出奇。普遍情況下，食糖時，舌頭會傳送訊息至大腦，分泌名為血清素的內分泌激素。血清素能令人鎮靜、感到舒緩及開心的內分泌激素。因而啟動了「獎勵機制」，令人記住這種開心的感覺及想再次食糖。</p>

<p id="h-miss-jc-comfort-food-who-25-miss-jc-saccharin-aspartame">除了生理需求外，令人喜歡甜食是基於商業因素。Miss JC表示，市面上的糖、朱古力、蛋糕等琳瑯滿目，包裝大都色彩繽紛而且望落非常美味，加上鋪天蓋地的廣告，甜食又被設計成跟「comfort food」、「安慰自己」、「獎勵自己」等想法聯繫在一起，其實是一種商業手段。加上我們非常容易於超市、商店等地方買到這些甜食，因而令人更加容易對甜食上癮。</p>

<p id="h-miss-jc-comfort-food-who-25-miss-jc-saccharin-aspartame">雖然根據世界衛生組織（WHO），每日糖分攝取量不可超過25克，不過Miss JC認為，於健康角度來看，糖分攝取應越少越好。雖然糖分是能量來源之一，不過其他健康食物，如雞肉、菜等，均可提供能量，同時提供營養素、礦物質等。另外，很多人因攝取過量糖分而變胖。<br><br>肥胖是一種慢性病，會擾亂身體的平衡，增加患心臟病、心血管疾病、糖尿病、中風等不同疾病的風險。</p>

<p id="h-saccharin-aspartame"><br>進食完高糖分的食物後，身體要分沁胰島素去降低血糖，當身體要長期分沁胰島素，逐漸地身體會對胰島素沒有反應，出現胰島素阻抗的情況。<br><br>女士們最在乎抗衰老、最怕見到色斑及皺紋。「糖化作用」是抗衰老的大敵，糖分會加速衰老過程，令身體內增加自由基，從而攻擊膠原蛋白，導致色斑及皺紋。</p>

<p id="h-saccharin-aspartame">代糖分為兩大類：人工代糖/甜味劑及純天然代糖。人工代糖及甜味劑由實驗室人工合成，價格低，例如糖精（saccharin）、阿斯巴甜（aspartame），常見於汽水。不過這些人工代糖易擾亂血糖。</p>

<h2 class="wp-block-heading" id="h--5"><strong>食代糖會上癮？</strong></h2>



<p><strong><br></strong>代糖之所以會甜，是因為它們會與味蕾受體結合，將訊息傳送至大腦，令大腦誤以為吃到糖而產生甜的味覺。<br><br>代糖，尤其人工代糖，其甜度很高，長期食用代糖，大腦或會對此感覺退化及盲目，對甜味的閾值因而被提高，令身體養成嗜甜的習慣，增加大腦對甜食的渴望，亦可能令人不自覺吸入更多熱量，從而引致肥胖問題。Miss JC透露，人工代糖亦可能會影響腸道功能，而且大量食用人工或天然代糖，可能會出現肚瀉的情況。</p>

<h2 class="wp-block-heading" id="h--6"><strong>人工代糖/甜味劑對人體的影響</strong></h2>

<p>人工代糖/甜味劑由實驗室人工合成，供應穩定而且價格低，甜度高，受食品加工業廣泛使用，如糖精（saccharin）、蔗糖素（sucralose）和阿斯巴甜（aspartame）。<br><br>人工代糖即使不會被身體吸收產能，但舌頭上的味蕾不能識別它與其他糖的分別，或仍會導致胰島素水平少量上升。<br><br>短時間攝取人工代糖/甜味劑並不會影響血糖，不過長期攝取會改變腸道中微生物的比例，從而影響血糖和免疫系統。</p>

<h2 class="wp-block-heading" id="h--7">人工甜味劑易增重？</h2>



<p></p>



<p>2017的研究指出，這些人工甜味劑對減重沒有幫助，反而增重，蔗糖素仍帶有熱量且通常會添加麥芽糊精maltodextrin或dextrose，而且會抑制鋅和碘的吸收，這兩個礦物質對於甲狀腺功能是非常重要的，人工甜味劑對人體長遠的影響存未知之數所以請自行斟酌使用。</p>

<h2 class="wp-block-heading" id="h--8">阿斯巴甜副作用</h2>



<p><br>而人工甜味劑如E951阿斯巴甜，可導致各種副作用，包括頭暈、頭痛（因過度刺激神經未梢，增加肌肉緊張）、出現幻覺、抑鬱、噁心、肌肉痙攣、失眠等。另外，人體消化阿斯巴甜時，會分解成甲醛（致癌物質）。苯丙酮尿症人士，亦不能進食阿斯巴甜。</p>

<h2 class="wp-block-heading" id="h--9"><strong>純天然代糖</strong></h2>



<p>純天然代糖從植物中提取，天然、不升高血糖（適合糖尿病患者）、卡路里較低，有些更不含卡路里，被視為減肥恩物。</p>



<h4 class="wp-block-heading" id="h-1">健康代糖—1. 赤蘚糖醇</h4>



<p>赤蘚糖醇透過發酵葡萄糖而成，甜度大約是蔗糖的70%。它幾乎不含卡路里（每克提供0.4卡熱量），升糖指數是1，具有控制血糖的作用。人體對赤蘚糖醇的耐受性高，因此不易引起腹脹、腹瀉等胃腸不適問題。</p>

<h4 class="wp-block-heading" id="h-2">健康代糖—2. 羅漢果苷</h4>



<p>羅漢果苷較蔗糖甜150-300倍，中藥甜味，零熱量，零升糖指數，純天然，沒有副作用，可是較貴。</p>

<h4 class="wp-block-heading" id="h-3">健康代糖—3. 甜葉菊</h4>



<p>甜葉菊源於天然植物甜菊中提取（有些產品會經過提煉），甜度是蔗糖的200-300倍，零碳水化合物，零熱量，升糖指數是1，適合高血壓、高血糖及糖尿病患者，但是卻有點草藥味及苦味，要看個人接受程度。</p>

<h4 class="wp-block-heading" id="h-4">健康代糖—4. 木糖醇</h4>



<p>木糖醇從粟米、樺木等植物中提取，有研究發現木糖醇能改善牙齒健康，味道與蔗糖相似，卻低熱量（每克提供2.4卡熱量）及升糖指數是8，不影響血糖。此外，木糖醇具有天然清涼滋潤的效果。可是人體不能吸收這些碳水化合物，所以攝入過多，容易出現肚瀉。<br><br>Miss JC認為，健康飲食跟「量」有關，凡事不能過量，但太多限制及令人有壓力，亦未必是一個好的選擇。<br></p>
