<p>為了不浪費食物及節省金錢，很多上班族都會將前一晚吃剩的晚餐放入飯盒，留待翌日的午餐時間將它翻熱再吃。惜食本來是美德，但其實有些 隔夜餸 潛在健康風險，若處理不當、放置時間太久更會造成食物中毒！</p>





<h4 class="wp-block-heading">01 雞蛋</h4>



<p>隔夜蛋不但流失了營養，而未熟透的蛋黃更很容易在冷藏期間滋生「沙門氏菌」。</p>

<p>因此，太陽蛋或溫泉蛋都不應該放過夜，以免導致腸胃不適。</p>

<h4 class="wp-block-heading">02 海鮮</h4>



<p>海鮮本來就是要趁新鮮吃，隔夜海鮮不但會產生腥味，而且其蛋白質會出現變化，有機會傷害肝臟健康。另外，若不經過徹底加熱，更會造成急性腸胃炎。</p>

<h4 class="wp-block-heading">03 葉菜</h4>



<p>並不是所有蔬菜都不適宜隔夜，但由於莖葉類蔬菜的硝酸鹽含量最高，例如白菜、菠菜、油麥菜等。</p>

<h4 class="wp-block-heading">04 白飯</h4>



<p>白飯、麵食等澱粉類食物在室溫放置太久會滋生「仙人掌桿菌」，即使再將它加熱亦有可能會導致食物中毒，所以大家記得要將飯盒冷藏，不要在室溫下放置超過一小時！</p>

<p>去年有一名比利時青年因為食掉一個在室溫放置5天的意粉後，因感染「仙人掌桿菌」而食物中毒致死。</p>

<h4 class="wp-block-heading">05 油炸食物</h4>



<p>油炸食物本來就是不健康的食物，由於經過高溫油炸時產生丙烯醯胺，屬於可能會造成人類癌症的致癌物，若將炸物雪藏後再翻熱，有機會再次增加丙烯醯胺。</p>

<h4 class="wp-block-heading">06 雞肉</h4>



<p>雞肉是高蛋白質食物，但翻熱會破壞蛋白質，造成胃痛或胃漲。而且一些白切雞因為保持肉質而未完全煮熟，隔過夜會容易受「沙門氏菌」感染。</p>
