<p>蘿蔔、甜菜根、大頭菜屬於根菜類 蔬菜 ，頂部多菜的地方建議買回來後切掉，因為根部會吸收蔬菜中的水分，導致蔬菜變軟，很容易變壞。南瓜、大蒜、馬鈴薯、芋頭、番薯等根莖類 蔬菜 ，則不應該放在冰箱外，放在室內陰涼處即可。</p>

<p>蔬菜 買回來後，首先要將蔬菜上的橡皮筋﹑束帶取下來，這樣能防止傷痕和循環不良。把蔬菜放進冰箱保存前，建議先將葉片噴濕，然後用舊報紙包起來，莖部朝下放入冰箱裡內的蔬果保鮮位置；或利用廚房紙巾沾濕後將蔬菜包住，也能將蔬菜的保鮮期延長約3至4日，<br><strong>*小貼士：盡量不要預先沖洗或處理蔬菜，避免加快蔬菜腐爛速度。</strong></p>

<p>在選購蔬菜時，建議大家選購根莖類瓜果，如蘿蔔、南瓜、番薯等，保存期相對較長；而椰菜、西蘭花及西生菜等亦可存放最少一星期。而較容易變壞的蔬菜可以先食用，在烹調前先清洗，如菜心、生菜等葉菜類。</p>

<p>吃不完的蔬菜可以選擇以醃製方法保存，白蘿蔔﹑青瓜﹑白菜都適合醃製。以白蘿蔔為例，洗淨切成適當大小後，放入鹽用手攪拌、靜待約一至兩個小時等待入味與去除水分；另一邊用爐將醋、冰糖煮化，拍扁蒜頭及辣椒；將靜置完成的白蘿蔔用水洗掉多餘的鹽分，最後準備一個密封罐或保鮮盒，加入白蘿蔔及醃料冷藏即可完成簡易的醃蘿蔔。</p>

<p>如果發現冰箱的綠色蔬菜、蘿蔔已經有點變色，感覺開始變壞，可以用「冷泡法」復活蔬菜，將蔬菜或蘿蔔切片，再將其浸泡在冰水中約 15 至 20 分鐘，就能在某些程度內讓它「重生」。其實食材一般不宜存放太長時間，大家最好還是食幾多買幾多。</p>
