<h4 class="wp-block-heading"> 羽衣甘藍 ：富多種維他命</h4>



<p> 羽衣甘藍 富含多種維他命，例如維他命A、C、β-胡蘿蔔素。維他命A有助加強人體呼吸道黏膜的保護和再生，維持呼吸道的健康。維他命C可以增強白血球的活性，從而提升人體抵抗力。β-胡蘿蔔素則能在人體中轉化成維他命A。</p>

<p>冬菇含有豐富的香菇多醣，有研究證明，此成分能激活免疫細胞和促進免疫細胞的生長，對提高抵抗力大有幫助。咬下去啖啖肉的冬菇，混合爽脆的木耳和馬蹄，是多層次口感的來源。</p>

<h4 class="wp-block-heading">五種蔬菜增加口感</h4>



<p>富含β-胡蘿蔔素的紅蘿蔔，帶有天然甜味，能中和羽衣甘藍的苦味。而冬菇和木耳的爽滑也能覆蓋羽衣甘藍的粗糙感。由五種不同的蔬菜組成的素餃子，口感豐富而且味道鮮美，即使沒有肉的餃子，都可以食得很滿足。</p>

<p><strong>材料</strong>：<br>餃子皮 12塊<br>羽衣甘藍 1碗<br>木耳絲（已浸水） 半碗<br>冬菇（已浸水） 4粒<br>紅蘿蔔 半碗<br>馬蹄 4粒<br><br><strong>調味料</strong>：<br>鹽1茶匙<br>胡椒粉1茶匙<br>麻油 少許<br>清雞湯1杯<br>清水1杯<br><br><strong>做法</strong>：<br>1.羽衣甘藍放入沸水中煮軟，撈出後瀝乾，切碎備用。<br>2.紅蘿蔔、馬蹄、冬菇切粒，木耳絲切短。<br>3.少許油熱鍋，加入 羽衣甘藍 、木耳絲、紅蘿蔔、馬蹄、冬菇炒熟。然後加入鹽、胡椒粉、麻油調味，放涼備用。<br>4.將適量的餡料放在餃子皮中間，餃子皮邊用水沾濕，對摺包成餃子狀。<br>5.清雞湯和清水混合，煮沸後放入餃子，煮熟即成。</p>

<p>3.奇亞籽<br>亞麻籽及奇亞籽都屬於種子，含有非常豐富的纖維、蛋白質、omega-3、鉀及鎂，以調節血壓水平，預防心臟病。<br><br>纖維通過減慢碳水化合物的消化速度和糖被吸收到血液中的速度來幫助預防 2 型糖尿病，可以穩定血糖水平同時維持腸道健康。</p>

<p><br>4.羽衣甘藍<br>羽衣甘藍含有非常豐富的抗氧化劑，含有豐富的維生素C、A、K等、 葉酸、 鈣質及鐵質等，可改善貧血、預防便秘、降低膽固醇並有抗氧化作用。而且羽衣甘藍含有的維他命C比大多數其他蔬菜高，有助人體產生膠原蛋白並保護細胞。有研究指出羽衣甘藍可以有效降低膽固醇。<br><br>雖然羽衣甘藍味道苦澀，而且價格不便宜，但因為營養價值高而備受推崇。</p>

<p><br>5.燕麥<br>燕麥含有豐富的維他命B及E、纖維、蛋白質及礦物質。它對降低血膽固醇及預防心血管病有一定的作用，而且熱量低，是健康早餐的首選 。</p>

<p><br>6.西藍花<br>西蘭花含有抗炎作用的硫化合物，可以預防癌症。而且含有大量纖維、有益心臟的維他命及礦物質，幫助維持消化系統健康及降低膽固醇，可以減少患中風、高血壓和心臟病的風險。另外西蘭花還含有大量鈣質及維他命K，有助增強骨骼強度，預防骨質疏鬆。<br><br></p>

<p>7.藜麥<br>藜麥含有維他命B群，包括核黃素（維他命 B-2）、硫胺素（維他命 B-1）和葉酸（維他命 B-9）。維他命B群有助將食物代謝為能量，幫助產生紅血球，減低貧血及患上消化系統疾病。而且含有豐富膳食纖維，藜麥大部分纖維是不溶性纖維，有助維持腸道健康、降低膽固醇。</p>

<p>8.藍莓<br>藍莓含花青素，能增強抗氧化能力、對抗自由基，清除體內有害物質。</p>

<p>9.椰菜花<br>椰菜花為蔬果中的抗癌之王，椰菜花富有蘿蔔硫素（Sulforaphane），在不少動物研究中已發現蘿蔔硫素有效抑制癌症或腫瘤生長，蘿蔔硫素能消除已受損害的細胞，從而能阻止癌細胞的增長。Michelle Hauser博士建議一周至少吃3次，有效降低癌症風險。<br></p>

<p>10.鷹嘴豆<br>鷹嘴豆又名三角豆，它含豐富膳食纖維，容易飽肚，可用於抑制食慾；高蛋白而且低脂，相比食用肉類，以植物性蛋白質取代動物性蛋白質，更可減低飽和脂肪的攝取。</p>
