<h2 class="wp-block-heading" id="h-5">5款<strong>熟菜分別放在室溫和冷凍溫度下測試</strong></h2>

<p>因應坊間有說法指熟菜存放在雪櫃一夜（俗稱隔夜菜）後，亞硝酸鹽含量會迅速增加，食安中心於是從零售點收集五種常吃的蔬菜樣本: 莧菜、白菜、菜心、唐生菜和翠玉瓜，進行研究，並在烹煮前後檢測其亞硝酸鹽含量。烹煮後，每種熟菜會分成兩組，分別在室溫和冷凍溫度（攝氏零至四度）下存放，並按時（在存放滿六、12、24、36、48、72小時後）檢測其亞硝酸鹽含量。</p>

<p>研究結果顯示，熟菜在雪櫃裡存放一夜後，其亞硝酸鹽含量未有增加；而存放三天後，亞硝酸鹽含量仍然很低。存放溫度是影響熟菜中亞硝酸鹽含量上升的主要因素，冷凍溫度會令細菌不活躍，延遲亞硝酸鹽的形成。</p>





<h2 class="wp-block-heading" id="h-"><strong><strong><strong><strong>硝酸鹽及亞硝酸鹽對健康的影響</strong></strong></strong></strong></h2>

<p>硝酸鹽本身可說是沒有毒性的，但其代謝物亞硝酸鹽卻可令血液中的血紅蛋白氧化，因而無法在人體內運送氧氣，令患者的嘴唇和皮膚發紫，引致正鐵血紅蛋白血症。健康人士很少患上正鐵血紅蛋白血症，而嬰兒卻較容易出現此症，原因是嬰兒的消化系統尚未成熟，導致硝酸鹽在細菌增生下轉化為亞硝酸鹽。此外，嬰兒體內的胎兒血紅蛋白較易受到亞硝酸鹽影響，同時亦較難把正鐵血紅蛋白還原至正常狀態。嬰兒的這種症狀被稱為「藍嬰綜合症」。</p>



<p>亞硝酸鹽亦可在體內與胺產生內源性硝化作用，形成亞硝胺。亞硝胺可能令實驗動物患癌，但流行病學研究未能證明從膳食攝入硝酸鹽會增加患癌的風險。從正常膳食中的蔬菜攝入硝酸鹽同時，也攝入其他生物活性物質(例如維他命C)或有助抑制內源形成亞硝胺。歐洲食物安全局亦認為，進食蔬果的益處大於透過蔬菜攝入硝酸鹽對人體健康可能產生的風險。</p>





<h2 class="wp-block-heading" id="h--1">每天食用五份蔬果可促進健康並降低非傳染病的風險</h2>

<p>新鮮蔬菜會從土壤吸收硝酸鹽以製造生長所需的蛋白質。環境中的細菌可將熟菜內的硝酸鹽轉化為亞硝酸鹽。亞硝酸鹽會降低血液攜帶氧氣的能力，亦可能在體內產生導致動物患癌的亞硝胺。</p>



<p>然而，現有科學數據未能證明從飲食中攝入硝酸鹽和亞硝酸鹽與人類患癌有關。世界衞生組織建議每天食用五份蔬果，以促進健康並降低非傳染病的風險。蔬菜提供抗氧化物、植物化學物質、維生素、礦物質、膳食纖維和植物性蛋白質。這些化合物可發揮協同效應，並預防或減緩一些非傳染病的發生。</p>





<h2 class="wp-block-heading" id="h-4">處理隔夜菜4大貼士</h2>

<ul><li>只準備適量食物，以減少剩菜量；</li><li>剩菜應在烹煮後兩小時內放進雪櫃貯存，並盡快食用；</li><li>食用前，剩菜應徹底翻熱至中心溫度達攝氏75度，及不應重覆翻熱；及</li><li>如剩菜置於室溫超過四小時，便不應食用。</li></ul>
