<h3 class="wp-block-heading" id="h-1">1.選擇持牌、可靠及衞生的食肆</h3>



<p>近年多了有很多私房盆菜，雖然市民多了選擇。但食安中心提醒市民於購買盆菜前，應先了解供應商是否持牌及衛生評價，勿光顧無牌食肆。 <br><br>如訂購盆菜，應向供應商說明提取盆菜的時間，避免供應商過早烹煮盆菜。在進食盆菜時，如發現食物味道或氣味有異，應立即停止食用。</p>

<h3 class="wp-block-heading" id="h-2">2.盆菜不可存放於室溫/冷存多過兩小時</h3>



<p>食安中心提醒市民不要過早提取盆菜，於食用前半小時至一小時為合適。以避免盆菜存放於室溫下過久而增加細菌繁殖的風險。經冷凍處理的盆菜應保持在攝氏4度或以下，以免盆菜存放在攝氏4至60度的危險溫度範圍內過久。</p>

<h3 class="wp-block-heading" id="h-75">３.徹底翻熱盆菜到攝氏75度或以上</h3>



<p>食盆菜之前一定要徹底翻熱食物至中心溫度達到攝氏75度或以上，或完全煮沸徹底翻熱後就即刻食。更要留意盆菜分量，因為分量愈大，便需要翻熱較長時間才可令食物熱透。也要注意盆菜頂部的食物，例如蔬菜丶海鮮！也要一同徹底翻熱 ！<br><br>盆菜在徹底翻熱後應立即進食，應使用公筷和公羹，並一次過吃完，避免將食物重複翻熱。</p>

<p>留意盆菜器皿是否適合直接翻熱，如有需要，可先將盆菜放進瓦煲或不鏽鋼煲內翻熱。避免用錯器皿釋出有毒物質。</p>

<p>盆菜經過第一次烹調，再食剩翻熱，若保存不當會增加細菌風險，易致食物中毒上吐下瀉！最好即日內食完，不建議重覆翻熱。</p>

<p>所謂「無雞不成宴」，每逢新年，雞一定會成為主食之一。「雞」為「吉」的諧音，有吉祥的意思，寓意新一年生活順利，平平安安。雞肉雖然脂肪含量比牛肉及豬肉少，仍需要注意避免進食高油脂的雞皮，去皮雞胸肉對比其他部位相對地高蛋白質和低熱量。</p>

<p>新年食蝦有「哈哈笑」的意思，寓意新一年每日都要開開心心，保持快樂。蝦含有豐富蛋白質﹑維生素A、維生素B群、鈣、鐵、磷、鋅及牛磺酸，有助強化肝及心臟，因此也有長壽的意思。</p>
