<p>紫薯頭號粉絲的Sammi表示，紫薯的營養價值非常高，幾年前曾上載在短片分享吃紫薯的心得。原來她曾有一段時間停吃紫薯，有次在街市老闆送她一款從未見過的紫薯，其外形又瘦又長，外皮跟以前吃過的紫薯也是很淺色的，但蒸熟後，裏面的顏色卻是淺紫色，而以前吃的則很深紫色。究竟它是紫薯抑或紫番薯，她心裏充滿問號，直言有時也會混淆兩者。</p>

<p>想食紫薯但又怕吸收太多澱粉會肥？Sammi教大家一招：把紫薯蒸後先放雪櫃一晚，第二日取出再蒸熱食用。紫薯在冷凍後會產生抗性澱粉，令食用後減少吸收澱粉，攝取相對較少卡路里，而白飯亦可用同樣方法處理，少吸收澱粉質。</p>

<p>相信不少人都會把紫薯跟紫番薯混為一談，以為兩者同屬一物，畢竟兩者只是一字之差。其實它們大有不同。紫薯屬於甘薯類植物科目，通常外形較瘦長，頭尾會有一端會尖的。而紫番薯則屬番薯類植物科目，外形較短和肥大。價格方面，紫番薯比紫薯便宜很多。</p>

<p>至於營養價值方面，紫薯比紫番薯較為低卡路里，每100克約有80卡路里，而維他命A的含量比紫番薯足足高於100倍！</p>
