<h2 class="wp-block-heading">雜錦蕃茄鍋</h2>



<p>材料：<br>蔬菜湯 300毫升<br>清水 300毫升<br>蕃茄 4個（洗淨，切件）<br>洋蔥 1個（去皮，切件）<br>豆腐 1磚（切4件）<br>粟米芯 8條<br>小棠菜 8棵（洗淨）<br>金菇 1 包（洗淨，切去根部洗淨）<br>冬菇 6隻（洗淨，去蒂）<br>芋絲 20扎<br>蒜頭 2瓣<br>茄膏 3湯匙</p>



<p>調味料:<br>鹽 1茶匙<br>牛至粉 1茶匙</p>



<p>做法：<br>中火燒熱1茶匙油，爆香蒜頭，加入洋葱煮至咖啡色。<br>下番茄及茄膏煮至番茄軟身，加入水及蔬菜湯，煮約30分鐘。<br>下調味料，加入餘下材料煮3分鐘，即成。<br></p>

<p>先食蔬菜，再食澱粉後食肉</p>



<p>有網友留言問：次序不應該是蔬菜、蛋白質或肉類、澱粉質？為何她會將澱粉質放在肉之前？就此她亦有詳細解釋，原來煮過肉類的湯底含更多脂肪，再煮澱粉質的話，便會吸收鍋中油分，攝取更多熱量，所以把肉類放最後。因為煮過肉類的湯底才會有油分，未煮熟之前，進食澱粉質就不會吸收這些油分。</p>

<p>不同配料的打邊爐湯底，脂肪含量可以相差很大，近年較流行的四川麻辣、台式麻辣湯、沙嗲湯、椰子雞湯、胡椒豬肚湯等都是較高脂的湯底。</p>

<h4 class="wp-block-heading" id="h-1">1.<strong>肉類忌過量</strong></h4>



<p> 打邊爐 期間，很多人都會以肉類為主食，不經不覺容易食得過量。如果想食得健康又飽肚，不妨適量進食碳水化合物，例如烏冬、芋絲、粟米等。烏冬的質感比較滑身，較不容易吸收湯底中的油分，芋絲可以增加飽肚感，可以避免過量進食脂肪含量較高的肉類。</p>

<p>如果想烚蔬菜，建議放肉前就烚菜。因為蔬菜的熱量雖然較低，但是蔬菜（尤其是有葉蔬菜和菇菌類）容易吸收油分，若果在 打邊爐 後期才放菜，反而會令脂肪攝取量再大大增加。</p>

<p> 打邊爐 的調味醬汁，建議可用適量豉油，自行加入不同新鮮的調味，例如蒜粒、蔥花、芫荽、薑、鮮辣椒等，調配比辣椒醬、沙茶醬更低鈉含量的醬料，而且脂肪含量也相對較低。</p>

<h4 class="wp-block-heading" id="h-">高脂湯底之選</h4>



<p>不同配料的 打邊爐 湯底，脂肪含量可以相差很大，近年較流行的四川麻辣、台式麻辣湯、沙嗲湯、椰子雞湯、胡椒豬肚湯等都是較高脂的湯底。</p>

<h4 class="wp-block-heading" id="h--1">低脂湯底之選</h4>



<p>想健康些，我們可以選擇鰹魚昆布湯、壽喜燒湯、蔬菜湯、芫荽皮蛋湯等，較低脂的湯底，可以直接減低食物於湯底中吸收的油分。</p>

<h4 class="wp-block-heading" id="h--2">湯底較高鈉</h4>



<p>此外，不建議飲用 打邊爐 湯底，因為湯底中的鈉含量一般都較高，加上在 打邊爐 的過程中，食物中的脂肪和鈉質都有機會和湯底融合，而且長時間加熱會令湯底的脂肪和鈉濃度增加。</p>

<p>近日，新型冠狀病毒肺炎的確診個案中，相信最備受關注的案例是曾於觀塘某Party Room打邊爐和BBQ的家庭。當晚有份參與聚餐的19人中，目前已有11名成員確診證實感染新型肺炎，引起廣泛討論。此事一出，不少人都非常擔心 同枱 進餐時交叉感染的問題，在患者可能無病徵且不自知的情況下，大家應如何自保，避免交叉感染？</p>





<h4 class="wp-block-heading"><strong>了解感染成因</strong></h4>



<p class="has-normal-font-size">本地感染及傳染病專科醫生曾祈殷日前（10日）接受訪問表示，打邊爐時熱水不斷翻滾，氣流在空氣中滾動得較快，令患者咳出的飛沫水點蒸發，飛沫因而變得較細、較輕，可以飄浮長遠距離；加上打邊爐期間，一般人會開風扇或冷氣散熱，都有助飛沫傳播。</p>

<p class="has-normal-font-size">而港大醫學院微生物學系傳染病學講座教授袁國勇早前接受電視台訪問時指，有家庭聚餐時感染新型冠狀病毒，認為是透過飛沫傳染，而非因打邊爐而造成氣霧傳播。他指打邊爐時火鍋很熱，蒸氣上升，相信與霧化無關，而打邊爐本身屬近距離接觸，眾人進食期間交談、親密接觸時，唾液可能落在碗碟餐具上後，被人觸及、進食或摸到眼、口及鼻，因而引致感染。</p>





<h4 class="wp-block-heading"><strong>進餐防疫法 1：「一人一碟」</strong></h4>

<p class="has-normal-font-size">其實，平常我們吃飯、碗筷的接觸，都有可能產生交叉感染。而現時新型冠狀病毒肺炎疫情嚴重，一家人一起同枱食飯，最好當然是煮好後，以未使用過的餐具分配「一人一碟」，減少一起分吃同一盤食物的機會，自然能減低風險。</p>





<h4 class="wp-block-heading"><strong>進餐防疫法 2：使用公筷</strong></h4>

<p class="has-normal-font-size">以上提及新型冠狀病毒肺炎主要透過飛沫傳播，亦可透過接觸傳播。當中，間接接觸的感染率比飛沫傳播的風險更高，因此大家飯前後都應保持雙手清潔，家人、朋友之間在用餐如不能做到「一人一碟」，也應堅持使用公筷，減低傳播機率。</p>





<h4 class="wp-block-heading"><strong>進餐防疫法 3：保持一定距離</strong></h4>

<p class="has-normal-font-size">有研究指出，是次病毒在家庭傳染風險極高，病毒入侵率（Attack Rate）更逾80%。有鑑於此，大家一旦出現呼吸系統病徵（如發燒及咳嗽等症狀）、懷疑自己已受感染的情況下進餐時，最好要保持距離各自進食，以保個人及身邊人的安全。</p>

<p>昨天新增一宗新型冠狀病毒確診個案，一家庭在打邊爐聚會後至少9人確診，上海專家指打邊爐和焗桑拿等活動可透過 氣溶膠 播毒。《 抗疫全攻略》 找來中大通識教育部高級講師， 彭金滿博士為大家解話。</p>



<p>2月3日起每逢星期一至五，新城知訊台《原來生活好快樂》時段內《 抗疫全攻略 》，主持們都會找來專家為聽眾帶來抗炎小知訊，一齊努力打這場仗。</p>





<h4 class="wp-block-heading">氣溶膠是甚麼？</h4>



<p>氣溶膠原理是指固體或液體粒子飄浮在半空，因空氣循環導致感染。即是約2.5微米的細小粒子（懸浮粒子PM2.5），飄浮在半空。</p>

<p>不過，一般人咳嗽或打噴嚏而噴出的飛沬粒子相對較大，體積幾十至幾百微米，最遠可噴至幾米距離，然後掉落，依附在地下。而飛沬愈小蒸發得愈快，蒸發後變幾微米的微粒，可成懸浮粒子。如一人帶病毒的飛沬以以上方式蒸發成微粒，就是新型冠狀病毒的氣溶膠，懸浮在半空的時間較長。</p>

<p>有專家指出新型冠狀病毒可透過氣溶膠傳播 。但是次因打邊爐而感染的個案與氣溶膠原理概念不同。打邊爐時大量熱蒸氣向上升，承托帶病毒的飛沬，飄浮在空中更長時間，增加感染機會。但氣溶膠本身粒子小，即使沒有蒸氣的情況下都可以飄浮在半空。</p>

<p>因此是次因打邊爐而感染的個案至少9人確診，當中用餐時間長及密閉空間，是增加感染機會更重要的因素。建議大家要時常保持空氣流通，及避免多人用餐。</p>
