<h2 class="wp-block-heading" id="h-">毛豆植物性蛋白質豐富</h2>



<p>翠綠、爽口的毛豆，又稱為枝豆，是未成熟的大豆，它含有豐富的植物性蛋白質，每100克毛豆含有大約13.1克蛋白質。毛豆亦含有豐富的膳食纖維，有助促進腸道蠕動，預防便秘，同時亦可增加飽肚感。毛豆的鉀質含量也很高，每100克毛豆含有478毫克的鉀質，可幫助排走體內多餘的鈉質，有去水腫的功效。大家除了可以用水煮的方法來烹調毛豆，亦可選擇用蒸或微波加熱的方法把枝豆煮熟。</p>

<p>本菇，又稱為鴻喜菇、靈芝菇、真姬菇、蟹肉菇，經烹煮後會釋放出一種天然鮮味，大大提升整道菜式的味道，令大家吃得更滋味。鴻喜菇含有硒質，具抗氧化功效，有助抵抗自由基對身體的侵害，增強身體免疫力。</p>



<p>此外，今次加入雞蛋作為蛋白質的來源，它含有多種人體必需胺基酸，有助修補身體受損的細胞。</p>

<h2 class="wp-block-heading" id="h--2">毛豆本菇蛋炒飯</h2>



<p><strong>材料：</strong></p>



<p>毛豆1碗<br>鴻喜菇半棵<br>雞蛋2隻<br>白飯1碗</p>



<p><strong>調味料：</strong></p>



<p>鹽少許</p>



<p><strong>做法：</strong></p>



<p>1.本菇切走根部，撕成一條條。<br>2.洗淨毛豆及鴻喜菇。<br>3.煲滾水，加入少許鹽，放入毛豆煮大約10分鐘，瀝水，放涼後去殼。<br>4.燒熱鑊，加入少許油，倒入蛋液，隨即加入白飯及鴻喜菇，炒2分鐘。<br>5.加入毛豆仁及少許鹽調味，炒勻，即成。</p>

<h4 class="wp-block-heading" id="h-"> <strong>翻熱 前</strong>：</h4>



<p>1.食物要平均放在容器內，如果是較大塊或厚身的食物，應放在容器旁邊，好讓所有食物均得到均勻的熱力。</p>



<p>2.用微波爐 翻熱 食物，最怕叮到飯菜變成「乾噌噌」，要解決這問題，可以先用有蓋的微波爐專用飯盒，或是用微波爐專用保鮮紙將食物覆蓋好，可保存食物的水分之餘，所產生的蒸氣亦有助消滅細菌。</p>



<p>3.如以保鮮紙覆蓋食物，尤其是高脂或高糖食物，最好在保鮮紙與食物之間預留一點空隙，以免食物受熱後，可能會熔化保鮮紙。</p>



<p>4.由於綠葉蔬菜的特性，蔬菜 翻熱 後一般會變黃，不妨以其他瓜果類或豆類食物代替。</p>



<p>5.切勿用微波爐烹煮連殼的雞蛋，因為蒸汽積聚在蛋殼內，會引致爆炸。如有需要用微波爐煮蛋，必須先把蛋殼剝掉或敲裂，並刺戳蛋黃/蛋白數下。</p>

<p>1.期間要不時取出食物攪動或翻動幾次，好讓熱力均勻分布，令食物得到徹底的 翻熱 。</p>

<h4 class="wp-block-heading" id="h--2"><br> 翻熱 後：</h4>



<p>1.叮完之後，不要太心急立即取出食物，最好再等兩分鐘，令熱力更加平均分布在所有食物。</p>



<p>2.熟食只能 翻熱 一次，如 翻熱 後仍未食用完畢，便應棄掉。</p>

<p>為了不浪費食物及節省金錢，很多上班族都會將前一晚吃剩的晚餐放入飯盒，留待翌日的午餐時間將它翻熱再吃。惜食本來是美德，但其實有些 隔夜餸 潛在健康風險，若處理不當、放置時間太久更會造成食物中毒！</p>





<h4 class="wp-block-heading">01 雞蛋</h4>



<p>隔夜蛋不但流失了營養，而未熟透的蛋黃更很容易在冷藏期間滋生「沙門氏菌」。</p>

<p>因此，太陽蛋或溫泉蛋都不應該放過夜，以免導致腸胃不適。</p>

<h4 class="wp-block-heading">02 海鮮</h4>



<p>海鮮本來就是要趁新鮮吃，隔夜海鮮不但會產生腥味，而且其蛋白質會出現變化，有機會傷害肝臟健康。另外，若不經過徹底加熱，更會造成急性腸胃炎。</p>

<h4 class="wp-block-heading">03 葉菜</h4>



<p>並不是所有蔬菜都不適宜隔夜，但由於莖葉類蔬菜的硝酸鹽含量最高，例如白菜、菠菜、油麥菜等。</p>

<h4 class="wp-block-heading">04 白飯</h4>



<p>白飯、麵食等澱粉類食物在室溫放置太久會滋生「仙人掌桿菌」，即使再將它加熱亦有可能會導致食物中毒，所以大家記得要將飯盒冷藏，不要在室溫下放置超過一小時！</p>

<p>去年有一名比利時青年因為食掉一個在室溫放置5天的意粉後，因感染「仙人掌桿菌」而食物中毒致死。</p>

<h4 class="wp-block-heading">05 油炸食物</h4>



<p>油炸食物本來就是不健康的食物，由於經過高溫油炸時產生丙烯醯胺，屬於可能會造成人類癌症的致癌物，若將炸物雪藏後再翻熱，有機會再次增加丙烯醯胺。</p>

<h4 class="wp-block-heading">06 雞肉</h4>



<p>雞肉是高蛋白質食物，但翻熱會破壞蛋白質，造成胃痛或胃漲。而且一些白切雞因為保持肉質而未完全煮熟，隔過夜會容易受「沙門氏菌」感染。</p>
