<p>這道低脂版 南乳炆齋 選用了不同的蔬菜，當中的蓮藕含有豐富的膳食纖維，每100克已經有4.9克纖維，除了能夠提供飽肚感，亦有助促進腸道蠕動，預防便秘。</p>

<p>而甘筍則含有豐富的β-胡蘿蔔素，能在體內轉化為維他命A，有助保護眼睛視力的健康。</p>

<p>至於雲耳，它含有豐富的鐵質，每100克已浸發好的雲耳便有5.5克的鐵質，有助製造紅血球，幫助預防缺鐵性貧血。</p>

<p>口感煙韌的豆乾其實是一個不錯的植物性蛋白質來源，而且它含有豐富的鈣質，有助維持牙齒及骨骼的健康。這道低脂版 南乳炆齋 亦加入了粉絲作為碳水化合物的來源，大家平日亦可以代替粥粉麵飯食用。</p>

<h4 class="wp-block-heading" id="h--4">低脂版 南乳炆齋 </h4>



<p><strong>材料：</strong></p>



<p>蓮藕1/3條<br>甘筍半條<br>冬菇（已浸）4粒<br>雲耳（已浸）半碗<br>豆乾2件<br>乾粉絲（小）1包<br>南乳4小磚<br>水2杯</p>



<p><strong>調味料：</strong></p>



<p>生抽1茶匙<br>老抽半茶匙<br>糖1茶匙<br>鹽半茶匙</p>



<p><strong>做法：</strong></p>



<p>1.粉絲用水浸軟，瀝乾，備用。<br>2.洗淨蓮藕及甘筍，去皮，切片。<br>3.豆乾切粒，備用。<br>4.燒熱鑊，加入少許油，爆香南乳。<br>5.加入蓮藕，甘筍及冬菇，炒勻。<br>6.加入水，蓋上鑊蓋，煮至蓮藕及甘筍軟身。<br>7.加入雲耳，豆乾及調味料，拌勻，炆大約3分鐘。<br>8.加入粉絲，煮2分鐘，拌勻，即成。</p>
